An outstanding aperitif, this refreshing spritz combines sharp citrus and sweet lemonade with a savoury hit from fresh thyme.
Ingredients
25ml Edinburgh Gin’s Lemon & Jasmine Gin
25ml Limoncello
12.5ml lemon juice
2 sprigs of fresh thyme
Sweet lemonade to top up
Method
Add the gin, Limoncello and lemon juice into a shaker.
Add a sprig of fresh thyme and muddle together.
Add ice and shake.
Fine strain into an ice-filled highball glass.
Top up with sweet lemonade.
Garnish with a sprig of thyme.
Seaside Gin & Tonic
The briny botanicals of our Seaside Gin are the perfect match for aromatic thyme and zesty grapefruit, in our take on the timeless G&T.
Ingredients
50ml Seaside Edinburgh Gin
50ml good quality tonic water
Ice
Garnish – fresh thyme and a grapefruit twist (or lemon twist)
Method
Add ice to a glass.
Pour the gin over ice and add tonic.
Garnish with thyme and a grapefruit twist (or lemon twist).
Rhubarb & Ginger Martini
Pale and interesting, this is a beautifully crisp gin Martini, stirred down and simply served with a lemon twist.
Ingredients
50ml Edinburgh Gin’s Rhubarb & Ginger Gin
15ml Dry Vermouth
Lemon peel to garnish
Method
Add Vermouth and gin to mixing glass with ice.
Stir and double strain into a Martini glass.
Garnish with a lemon peel.
Lemon & Jasmine Gin & Tonic
A citrus forward spin on a classic G&T, completely refreshing and delicately fragrant.

Light tonic water
Lemon peel to garnish
Method
Pour the gin into a rocks glass filled with cubed ice.
Top up with tonic water and garnish with a twist of lemon peel.
